Chef Ashay Desai is a culinary thought leader with over 24 years of experience, known for shaping progressive food experiences across luxury weddings, premium catering, destination celebrations, sporting hospitality and large-format events. His work sits at the intersection of culinary craft, storytelling, guest experience and operational scale, transforming conventional catering into immersive, design-led dining experiences.
Currently with Catering Collective, K Hospitality, he drives culinary innovation across Blue Sea Bespoke Catering, Palace Halls Mumbai and Araya Bagh New Delhi, with a strong focus on new-age catering, modern Indian cuisine, regional culinary storytelling, interactive live formats and contemporary presentation.
His portfolio includes culinary leadership for high-profile celebrations such as the Jeet Adani–Diva Shah pre- wedding and wedding celebrations, Aadar Jain–Alekha Advani sangeet and Anuv Jain–Hridi Narang sangeet, along with premium sporting hospitality for Mumbai Indians and Delhi Capitals in the Indian Premier League, the Indian Super League and Pro Kabaddi League.
A significant part of Ashay’s journey has been built around pre-opening, concept development and menu creation. At Travel Food Services, he was involved in opening hospitality operations across Mumbai International Airport T1, Delhi International Airport T3, Chennai and Kolkata airports, contributing to culinary execution, menu development, standardisation and service consistency across multiple formats.
At The Irish House, he was closely involved in conceptualising menus, shaping the food identity and creating a scalable guest experience for the brand. With Serafina, he contributed to the launch of the premium New York Italian dining format in India, focusing on authentic cuisine, menu engineering, elevated presentation and consistency. His broader culinary journey also includes Orchid Hotels and Pan India Foods.
A strong advocate of experiential dining, Ashay believes that the future of luxury food is not defined by expensive ingredients alone, but by the story behind the dish, the craft of its creation, the theatre of its presentation, the interaction it creates and the memory the guest takes away. Across his career, he has been associated with hospitality experiences reaching approximately 2 crore consumers and more than 1 lakh events. He has been recognised as Topmost Hospitality Icon – Chef, Progressive Chef of the Year and Caterer of the Year and has also participated as an industry speaker at the India Food Forum on culinary innovation, experiential dining, luxury catering and sustainability.
